With that delicious greenback cookie texture and a red jam center “bleeding out”, these wagon wheels are moreish like you would not believe! Although these beauties are "nasties" free and vegan, they definitely give the originals a run for their money!

Ingredients

4x Greenback Caramel Cookies
2 tsp coconut oil
1 can coconut cream
6 tsp raspberry jam
100g dark vegan chocolate

Directions

To make it, crumb 4x greenback caramel cookies and mix the crumb with 2 tsp coconut oil. split the crumb mix between 12x muffin tray holes, flatten with a glass and bake it for 10 minutes. Once cool, the biscuits will be hard and crunchy again, but just a third of the original thickness.
Then use the same silicone muffin tray to shape 6x disks of coconut whipped cream with a spoonful of raspberry jam in the middle and freeze it for 1h to firm up.
Place it between two of the re-shaped Greenback Vegan biscuits, and coat it in dark vegan chocolate. Let it set in the fridge for 10-15 minutes, et voila!
