Directions

1. Night before prep: Place the agar powder, grape juice + seltzer into a small saucepan. Whisk the mixture to disperse the agar. Bring the mixture to a boil over high heat. Continue to boil for 3 minutes

2. Place into the fridge to set overnight.

3. Scoop out the hardened part of the coconut cream, into a bowl.

4. Using an electric hand mixer, mix the coconut cream + maple syrup until smooth.

5. Place into the fridge until ready to serve.

6. Mash raspberries in a small bowl. Put aside. 

7. Layer the trifles, in 4 individual glasses, starting with a dollop of coconut cream, crumbles of cookies, spoonfuls of grape jelly, another dollop of coconut cream, toss over some blueberries, spoonfuls of raspberry purée, a final dollop of coconut cream + a generous serve of sprinkles.
