Protein Chocolate Mousse

A healthier alternative to traditional mousse made with cream, eggs and chocolate, this protein mousse is gluten free (using certified GF oats), higher protein thanks to Greenback protein powder, lower in fat and sugar and it’s also vegan! It’s rich and delicious and perfect to satisfy a sweet craving without the sugar crash.
This makes a great dessert but also a great breakfast, the low GI oats and Greenback protein will keep you feeling fuller for longer with the added health benefits of fibre, magnesium, thiamine and zinc. Using cacao powder will boost your antioxidants for an array of beneficial health benefits.

Ingredients

1 cup rolled oats
-
800g coconut cream
-
1/3 cup cacao powder (or sub with cocoa
powder)

1/3 cup Greenback chocolate protein powder
-
1/4 cup maple syrup (or sweetener of choice)

2 tsp vanilla extract

Pinch salt
Directions
Pour the oats into a blender with ½ the coconut cream, let sit for at least an hour to soak and soften.
Add the cacao, protein powder, vanilla, maple syrup and a pinch of
salt, add the remaining coconut cream.
Blend on high speed until smooth, approximately 30 seconds.
Pour into a container, glass jars or cocktail glasses and refrigerate overnight to set.
Remove from the fridge 15 minutes before serving, top with whipped coconut cream, chopped Greenback protein bars and grated chocolate.
Devour!
